I like to read books set in the places I travel to. While on Sanibel I bought a book written by a local author that partially took place on the island. It was crap! Not well written or edited. But what I did get from it was the famous Red Velvet Cake recipe from The Bubble Room on Captiva.
Last summer when I was on Kauai I read a book that I would probably not have otherwise read if it was not set on Kauai. It was quite trashy but did mention all of the places on Kauai that I have been to many times in over 25 years.
Red Velvet Cake
The Bubble Room
15001 Captiva Road
Captiva Island, Florida
Yield: one three layer 9″ cake
Preheat oven to 350 degrees
Cake:
3 3/4 cups self rising flour
2 ¼ cups sugar
3 eggs
1 ½ teaspoons vanilla
1 ½ teaspoons vinegar
1 ½ teaspoons baking soda
1 1/2 teaspoons cocoa
2 ¼ cups vegetable oil
1 ½ cups buttermilk
3 oz. red food coloring
Mix all ingredients together and pour into three greased and floured 9″ cake pans. Bake for 45 minutes to one hour or until a toothpick inserted into the center of the cake comes out dry.
Icing:
1 pound cream cheese
¾ pound butter
2 pounds confectioner’s sugar
3 cups pecans
Mix cream cheese and butter until smooth. Add sugar and mix. When smooth and well add the pecans in
